For my daughters last day of school, I surprised her and her class with cupcakes. Just a vanilla cupcake recipe baked in ice cream cones with butter cream frosting. I wanted the frosting to look like ice cream and achieved that affect by freezing the butter cream and using an ice cream scoop. The kids loved them! One little boy was half way through his, when he said, "Hey, this isn't ice cream!". This was a great treat to start summer vacation! Easy to make, but hard to transport. Gotta work on that.
