Mickey Mouse Cupcakes
My 2nd graders teacher loves Mickey Mouse. So for her birthday we surprised her during class with these cupcakes. So simple to make. After making a yellow cupcake and frosting them with yellow butter cream, I topped each one with a chocolate that I piped into shape and let hardened. Fast, easy, and very cute!
Dora Star Cupcakes
These Dora star cupcakes were so simple to make. I made chocolate cupcake and topped it with white butter cream. A cookie cutter made the star shape easy to make. The smile and eye brows were drawn on by an edible pen, the eyes were piped butter cream. My youngest daughter recognized that these weren't just any stars, they were Dora stars.
Reese's Peanut Butter Cake
I love experimenting and making new cakes. The friend I made this for really gave me free range of whatever I wanted to do. Her husband loved Reese's Peanut Butter Cups, so for his birthday I made a 10" square chocolate cake with peanut butter frosting. After experimenting for awhile, I came up with a great peanut butter frosting. Chocolate cake with this peanut butter frosting maybe one of my new favorites!
Dora Cake
This two year old birthday girl loved Dora, so it was an easy decision to make a Dora cake. I used a 9x13 cake and decorated it as a Dora story board. Dora had to go around the turtle pond, through the palm tree forest, and over a rainbow. The Dora figurines came from my daughters Dora Candy Land Game. The turtles and palm tree are chocolate and the rainbow is fondant.
Turkey Time Cupcakes
These were so much fun to make! I saw them in a cupcake book and just had to make them. I'm sure my friends at church think I'm crazy, putting all this work into cupcakes for just a church potluck, but the kids loved them. I made a pumpkin spice cake with cream cheese butter cream. Decorations included: caramel chew, chocolate covered corn flakes, Pringle Stix, Grape Nuts and green and orange sprinkles. Put them together and what have you got? A Thanksgiving Turkey Dinner!!!
Pie???
I was able to spend my Dads 70th birthday with him here in Hawaii.
I think I was in high school the last time I made my Dad a cake. He's not really a cake person, so I made his favorite pie into a cake. I made a white cake in a pie pan and used a little bit of butter cream and red raspberry pie filling for the frosting. Fondant as dough made the perfect touch. My Dad was so surprised! I wish I could spend every birthday with my family.

Picnic Cupcakes
My husband asked me to make cupcakes for a picnic he had to attend. He said nothing fancy, just simple cupcakes. So I made simple chocolate cupcakes, frosted with green butter cream. Chocolate covered almonds were used for the ants body. Chewy fruit gummies were used for the watermelons.
See! Simple!

Mermaid Cake
A little girl asked for a mermaid birthday cake, but not just any mermaid: The Blue Mermaid from the show Team Umizoomi on Nickelodeon. I made a 9x13 yellow cake and frosted and decorated it with butter cream. Some blue decorating gel made the mermaid's tail glitter.
Elegant Cake For Two
This is the second time I got to make my "Death by Chocolate" cake. They are so much fun! Can't go wrong with a Chocolate cake with chocolate fudge filling with chocolate butter cream frosting, topped with chocolate ganache. This time I made a few gum paste plumerias to decorate the top.
Spider man Cake
The birthday boy, who was turning three, had two request for his cake: 1.) spider man and 2.) monster truck. I Incorporated a spider man riding a monster four wheeler on a monster track. I made a 9x13 yellow cake with butter cream frosting. Oreo cookie crumbs made a perfect dirt for the track. The mom supplied all the toys for the cakes decoration.

Gabriel Iglesias's Cake
I'm a big fan of Gabriel Inglesias (Fluffy)! When I heard he was doing a free concert for the troops and their family at Pearl Harbor, I could hardly contain myself. I remember hearing him on XM radio years ago thinking this guy is going to be big! He was on "The Last Comic Standing" and has had several Comedy Central special with another one on the way. His shows are always sold out. Enough about Fluffy, let's get to the cake:
I decided to make a chocolate cake for Fluffy (he did a comedy bit once about cakes and ever sense then, fans give him cakes at his shows), but not just any cake, a TACO CAKE!!!
We got there 2 1/2 hours early to get a good seat, but there was already about a thousand people there. When I asked security if it would be possible to give Fluffy a cake, they replied "Just drop it off with the rest at the front gate". I wasn't the only one who had this idea to bring a cake to Fluffy, there were four other cakes!!! But mine was definitely the most unique (and might I add the best one there).
When the show started, Fluffy came out on stage, and the first thing he did was thank the five people who brought cakes . . . . . . then he gave me a shout out! He said he would like to thank the person who made the taco cake and that it looked really cool. He even joked about it, but I couldn't hear that because I was jumping up and down screaming "That's me! That's me! I brought you the cake Fluffy! I brought you the cake!" I personally don't remember doing that, but my husband and friends were witnesses to my crazy behavior. I was turning into "one of those fans"!
After the show (which was AWESOME!), I went to the front to see if he was signing autographs and taking pictures with fans. Security informed me that he will take pictures with the few who were lucky enough to get back stage passes for after the show. I told him I really wanted to meet him and thank him for the shout out on my Taco Cake. The security guy said; "Oh, you made that cake? Everybody back here has been admiring it. I'm sure he'll want to meet you. Let me talk to the lady in charge." Well the lady in charge comes over and says; "You're the Taco Cake lady? I'm sure he'll want to meet you. He thought that cake was really neat and he's a very gracious person, I'm sure he'll want to thank you. Just hang out here until all the back stage pass holders have met him and then we'll get you in."
My husband and I waited for over thirty minutes, and finally we were escorted back to meet him. I was so nervous, but had no reason to be. Fluffy was so nice and down to earth. He not only took a picture with my husband and I, he said I should go get the cake (sitting on the table with all the others back stage) and he'll get a picture of us and the cake! Again I was jumping up and down saying "Really? Really? This is so cool!", but I don't remember doing that.
It was an awesome night! What a great experience! I'm already planning my next cake for him when he comes back here in December!
